Vines and Territory
Recioto della Valpolicella DOCG is produced mainly with Corvina, Rondinella and Molinara grapes. These native vines of Valpolicella, in the province of Verona, give life to a unique and prestigious wine. The production area is characterized by calcareous and clayey soil, with a temperate climate that favors the ripening of the grapes.
Production Method
The production of Recioto della Valpolicella DOCG involves harvesting the grapes by hand, followed by the drying phase in the fruit cellar. This natural process of drying the grapes concentrates the flavors and increases the alcohol content of the wine. Fermentation takes place in stainless steel tanks at a controlled temperature, to preserve the organoleptic characteristics of the grapes. The wine is then refined in oak barrels for at least two years, before being released on the market.
Organoleptic Characteristics
- Colour: intense ruby red, with purple reflections.
- Nose: hints of dried fruit, spices and chocolate are revealed, with notes of vanilla deriving from the refinement in wood.
- Taste: sweet and harmonious, with soft tannins and a long persistence.
- Alcohol content: 13% vol.
Food Pairings
This sweet and prestigious wine is ideal to accompany traditional desserts such as tiramisu, zeppole and cannoli. It also pairs perfectly with mature cheeses and dried fruit. Its versatility makes it an ideal companion for the entire table, from dessert to convivial moments.
