Tasting notes

The nose presents intense and complex aromas of white flowers, citrus, white peach, aromatic herbs, and mineral notes. On the palate, it is structured and savory, with a beautiful acidity that gives freshness and momentum, a full body, and a long persistence with citrus and mineral returns.

Recommended pairings

Ideal with fish appetizers, crustaceans, risottos, stuffed pasta, elaborate white meats, fresh and medium-aged cheeses. Also perfect with refined Piedmontese cuisine.

Technical characteristics

  • Denomination: Derthona Colli Tortonesi DOC
  • Vintage: 2024
  • Grape variety: 100% Timorasso
  • Aging: steel and a short passage in wood

Winemaking and Temperature

After harvesting, the grapes undergo cold cryomaceration, followed by alcoholic fermentation in an autoclave with temperature control (around 15–16 °C) to limit contact with oxygen and preserve the most delicate aromas. All post-fermentation operations are carried out by protecting the wine with nitrogen, thus preserving the natural perfumes and aromatic substances intact.

temperature: 10th - 12th

Full, rich, full-bodied and pleasant. Scents of pear, peach, and floral notes are perceptible, along with hints of acacia flowers and honey. With time and bottle aging, more complex aromas will emerge, approaching notes of hydrocarbon.

Warm, soft, and well-balanced between high alcohol content and organic acids. Rich in fruity notes, well-structured, and with great aging potential.
