The History

Bovale, also known as Bovale Sardo or Muristellu, is a black grape variety rooted in Sardinia's millennial history. Cultivated for centuries in the island's countryside, this rustic and resilient grape has perfectly adapted to the Mediterranean climate and the region's granitic and sandy soils.

Cantine Antigori, located in the heart of southern Sardinia, passionately carries on the organic winemaking tradition. The name itself, "Antigori," evokes the ancient nuraghi that dot the Sardinian landscape, silent witnesses to a civilization that, three thousand years ago, already cultivated vines on this sun-kissed island.

This 2021 Bovale is cultivated according to certified organic farming principles, without the use of pesticides or chemical fertilizers. The result is a sincere and territorial wine, purely expressing the character of the grape variety and the Sardinian terroir: notes of ripe red fruits (cherry, blackberry), sweet spices, and a pleasant freshness that balances the wine's soft body.

Production Area

Isola dei Nuraghi IGT, southern Sardinia. The organic vineyards extend over granitic and sandy soils, typical of the region, at an altitude between 100 and 300 meters above sea level. The Mediterranean climate, characterized by warm and breezy summers, mild winters, and scarce rainfall, favors optimal grape ripening and concentrates the aromas. The proximity to the sea and constant winds (mistral) help keep the vines healthy and develop the characteristic mineral savoriness that distinguishes Sardinian wines.

Organic Bovale IGT is the ideal companion for traditional Sardinian cuisine:

First courses: Malloreddus alla campidanese (with sausage and tomato), culurgiones ogliastrini, fregola with clams, pasta with wild boar ragù.

Main courses: Porceddu (roast suckling pig), baked lamb with potatoes, grilled Sardinian sausage, stewed lamb, grilled red meats.

Cheeses: Semi-aged Pecorino Sardo, Fiore Sardo, Sardinian goat cheeses.

Winemaking and Temperature

The hand-picked grapes are selected, destemmed and left to macerate for a medium-long period in steel vats in order to extract the entire polyphenolic composition.
