The Ancient Art of Appassimento in the Heat of Puglia

Discover Luca Menicucci's Appassimento Puglia IGT 2023, a red wine that combines the millennial tradition of grape appassimento with the generosity of the Puglian sun. Intense, enveloping, and full of character, this wine represents the perfect union between ancient winemaking techniques and native South Italian grape varieties.

The Story

Appassimento is an ancient winemaking technique that dates back to Roman times. It involves drying grapes after the harvest, concentrating sugars, aromas, and polyphenols to obtain more structured, complex, and long-lived wines. This practice, made famous by Amarone della Valpolicella, now finds new expressions in various Italian regions, including Puglia.

Luca Menicucci, an experienced Tuscan producer, chose to apply this traditional technique to Puglian grapes, creating a wine that combines the power and softness of Southern Italian grape varieties with the elegance and complexity that only appassimento can confer. The grapes, harvested at perfect ripeness, are naturally dried for several weeks, losing water and concentrating all their noble components.

This Appassimento Puglia IGT 2023 stands out for its intense and enveloping aromatic profile: notes of very ripe red and black fruits (plum, kirsch cherry, blackberry), sweet spices (vanilla, cinnamon, cloves), cocoa, and tobacco. On the palate, it is warm, soft, and velvety, with silky tannins and a long, persistent finish. Its significant structure and aromatic concentration make it a wine of great personality, perfect for special occasions.

Production Area

Puglia IGT, a region in Southern Italy. The vineyards extend across the Puglian plains and hills, where the warm and sunny Mediterranean climate favors optimal grape ripening. The soils, predominantly clay and limestone with the presence of red earth, give the wines structure, body, and the characteristic softness that distinguishes Southern Italian reds.

The generous Puglian sun, scarce rainfall, and sea breezes that mitigate the summer heat create ideal conditions for cultivating grapes rich in sugars and polyphenols. After harvesting, the grapes are dried in controlled environments, losing about 30-40% of their weight in water and concentrating aromas, sugars, and noble substances. This process, combined with aging in wood, gives the wine complexity, structure, and a unique character.

Serving temperature: 16-18°C

Tip: Open the bottle at least 30 minutes before serving or decant to allow the wine to express its full aromatic complexity.

A red wine of great character and personality, perfect for important dinners, special occasions, and for those seeking a structured and enveloping red at an accessible price. The appassimento confers complexity and depth typical of higher-end wines.

Winemaking and Temperature

Grapes vinified with the drying technique produce a denser must, in which are found the aromatic substances that reach very high concentrations. The color becomes darker, impenetrable to the sight: the scent is what guides the discovery of the characteristics of the must, so full and harmonious to suggest all the potential of the wine to come.
Refinement: in stainless steel tanks

temperature: 16th-18th
